ZOOCO ESTUDIO designed the new bakery located in the center of Santander, Spain. Panistas is the result of the client's enthusiasm for making a bakery that is different from the rest, both in terms of product and aesthetics.

The proposal is based on the origin of bread, on the essence, on that first step before being cereal, on the earth. The materials, colors and shapes of the interior are inspired by the earth and with this concept they create a beautiful, warm and pleasant atmosphere for the user.
From this search for origin and essence, ZOOCO ESTUDIO's proposal adopts natural materials found in their raw state in nature. The project consisted of a reform of the existing space, in which the original structure is recovered, leaving beams and pillars with natural wood.

The protagonist of the project is the rammed earth block, made of raw earth in different formats. This material is present in the main elements that configure the space and contrasts with the black iron that is used to frame these elements with slender and linear pieces.

The program consists of a commercial area for the sale of bread and related products, and a workshop as a production space. The commercial area is organized around the counter, which in turn is transformed into a bench to serve some tables. Through wide openings in the façade, the interior of the bakery opens up to the outside.

Project description by ZOOCO ESTUDIO

Panistas is the new bakery located in the center of Santander. The client shows us their enthusiasm to make a bakery different from the others, both in product and aesthetics.

For this reason, in this project, the creative process does not revolve around the bread and it's imaginary, but around its origin. With this idea, we create a beautiful, warm, and pleasant atmosphere, a new environment for the buyer. The bread and the products will complete the space giving the connotations of a bakery.

We go back to the essence, to the earth, to that first step before being cereal, later flour, and finally bread. We want to use the earth both as a material and as a chromatic range.

In our research, we have a range of products made 100% with the earth that allows us to provide our space with those textures and colours that transport us to the origin.

The earth is an inspiring and determining element in the choice of textures and colour palette. In this search for the origin and essence, we chose to complete the project with the use of natural materials found in their raw state in nature.

The original structure of the premises is uncovered, leaving beams and pillars with natural wood. The earth block, made of raw material in different formats, is the protagonist material in the project, being present in the main elements that configure the space. Black iron, on the other hand, is used to frame the latter giving us the artisan and productive character.

The distribution of the space consists of a commercial area for the sale of bread and related products, and a workshop as a production space. Although they are independent spaces, a visual relationship is pursued that allows customers to observe the production of bread and note its artisanal character. In the commercial area, the space is organized around the counter piece, which can be transformed into a bench to serve tables, where the consumption area opens to the outside through the wide openings in the façade. On the other hand, behind the counter, there is a display cabinet, which houses the presentation of bread and multiple services.

Zooco Estudio is a young architectural firm founded in 2008 by Miguel Crespo Picot, Javier Guzmán Benito and Sixto Martín Martínez, with head offices in Madrid and Santander. Zooco Estudio´s philosophy is facing each project, from interior interventions to large structures building, through the same creative process.

Developing projects with different scales, they realize that architectural decisions are always the same: to create spaces that give response to needs and environment, always based on the generation of a clear concept as the base of the project.

This vision of architecture and the flexibility to adapt to different projects, has made them understand practice at a time of social and economic crisis.

Zooco Estudio tries to project with fine materials and simple shapes to achieve a timeless and functional aesthetic. They always search for neutral spaces and projects that last over the years. With this objective, they combine the research into new materials and systems, with the knowledge of traditional processes.

Throughout their professional career they have won different prizes and contests, among which the Civic Cultural Center of Soto de la Marina (Cantabria) and the Performing Arts Center in Verín (Galicia). They combine large-scale works with the creation and renovation of spaces in the contract, retail and residential sectors, highlighting projects such as the restaurant La Maruca, Orgaz and Atrapallada, or hotels such as Hotel Azul or Flamingo.
